Sun-Dried Tomato Pesto

Amazing. I was afraid of too much acidity with sun dried tomatoes but need not fear because it’s well balanced with the walnut part of the pesto. Orecchiette served in a half-sundried tomatoes and walnuts pesto, with marinated eggplants and topped with flowers.

This consisted of orecchiette pasta served in a chunky, richly flavorful sundried tomato and walnut pesto with marinated eggplant, plus smoky authentic-tasting 🐷-free Thrilling Foods Bakon™ and topped with micro arugula. The combination of flavors was delicious and satisfying, and it was wonderful the way the tiny ear-shaped orecchiette paste cupped around the other ingredients.
