Peach Cobbler French (vegan version)

This consisted of two thick slices of 🐥🥚-free and 🐄🥛-free sourdough French toast that was crisp at the edges and fluffy inside topped with a luscious chunky juicy peach 🍑 compote and oat crisp crumble.
