After visiting Oregon Donkey Sanctuary NW we ate lunch at Mesa Fresca. They offer Mexican
and Peruvian dishes. One of my favorite dishes as a child was Lomo Saltado which is traditionally made with beef, tomatoes, onions and French Fries with a side of rice. Thankfully Mesa Fresca makes a vegan version with Beyond meat! It's so tasty and reminds me of my mama's cooking. #oddmaninn
