Vegan Eggplant Parmesan

WOW. I love this place in general for having an entire vegan menu. I cannot wait to go back and try more things on the menu. This eggplant parm was incredible and very filling as well. Usually I eat eggplant parm and question whether or not it’s vegan, so I was thrilled when I was assured this was fully vegan.
