Beetroot Hummus

Had an unexpected business lunch. There was no vegan option on the menu but they were happy to adjust menu items. The beetroot hummus was part of a 2-course set lunch. It was beautifully presented and tasty, but could do with less olive oil. The addition of granola was quite unique and added a crunch. I will be adding pomegranate to my beetroot hummus now. 😆
