I'm so glad I picked this. It was so, so incredible! This eggplant is cooked down so well. Sometimes eggplant can have tough skin, but they really took their time to cook this all the way to it's just a silky texture all the way through. This is a pretty oily dish, but some rice or paratha can help soak that up! The eggplant and oil came together to create a really buttery mouth feel. The fresh scallions on top add a nice fresh flavor to this delicious dish. I chose spice level 3, and I thought it was perfect. It very slowly built up, making it a manageable heat. I'm so excited that I get to eat the leftovers for lunch today! This is a more expensive restaurant with this being $15.75, but they are very consistent with high quality here!
