I don't know why it's been so hard for me to find sumac in stores! I finally found this in the downtown Minneapolis Whole Foods. Sumac has a somewhat tart, citrus-y flavor that pairs really well with sesame and herbs to make za'atar. I seasoned some Butler soy curls with sumac, toasted sesame seeds, oregano, and Trader Joe's "Everything but the Leftovers" seasoning to make a really nice pita filling. I love when spices come in glass bottles and this design is also really nice.
