This consisted of tomatoes stewed in a creamy rich sauce with cannellini beans, roasted carrots, kale, and corn. Topped with luscious, rich cashew chevre and scallions, and served with toasty roasted garlic bread. It was hearty, flavorful, nourishing, and comforting. This month, as part of Vegan Dining Month, a portion of the proceeds will be donated to Meals On Us PDX, a local nonprofit that provides healthy meals to people suffering from food insecurity.
