We wanted to keep meals pretty simple on this trip up to the cabin. We found these frozen bologna slices in the freezer, so they took the place of a traditional breakfast meat on our breakfast sandwiches. I fried up the bologna slices with a JUST Egg fold. I also added a fresh tomato and some Follow your Heart mayo mixed with Cholula. It turned out to be a pretty good sandwich!
