This ramen is a combination of their Bali and Shoyu broths. From what I can tell, that means its base has soy, tahini, and chili oil. It also has house chili crisp, gochujang, and seasonal vegetables. This is a very hot ramen! I tasted it a few times, but I would not be able to handle a whole bowl. The tahini was a really interesting addition to the broth. It added a creamy nuttiness that might help counteract some of the heat. This ramen also had some fun mushrooms that I couldn't identify, but appreciated.
I'm looking forward to dining at Tori again. It is a really cool space! Half of the restaurant is made out of an old train car. It's decorated beautifully with plants and antique lighting fixtures. It honestly reminds me a bit of a Miyazaki film! It would be so magical in the winter. ❄️🍜
