Always love seeing a dedicated vegan dish on the menu, and The Brickhouse has taken care to not just throw something together for that “one vegan in the crew”. The dish features a thick slice of eggplant (could possibly use a second), but well-seasoned and fresh. The mozzarella seems like a store-bought type (Daiya or Violife or similar) but I’m not complaining. I’d suggest they make an in house parm substitute instead, since it’s in the title of the dish, but that’s fine; the star of the dish is the marinara tomato sauce. Fresh and flavourful with a hint of spice - possibly from some chili pepper flakes. Dynamite flavour. Spaghetti could have been slightly less cooked for more of an al dente bite, but who cares when the sauce is so good.
