I find that cashew isn’t my favorite base for macaroni and cheese. The flavor of cashew can be great when uplifted by the right spices and other additions, but cashews don’t emulate cheese in the sense that there isn’t much of a pull, and there is a tendency for cashew sauce to get dry in some places.
This is a vegan mac that I think doesn’t try to copy traditional mac and cheese by replicating familiar textures and flavors. The texture was not cheese-like, and the flavor wasn’t very strong. Overall, this was okay and it gets the job done if you have a craving. I’d probably not grab it as a side again if I returned. Not bad, but not my favorite.
