Whole Kernel Golden Sweet Corn

This canned #corn is naturally #sweet and delicious (and most importantly, cheap! #value) I’m not the biggest corn fan — fighting words, perhaps, in The Cornhusker State — but it was a good addition to the tofu chili I meal-prepped last weekend, as the kernels added texture, color, and depth of flavor. As #cannedfood, it’s good for the #lazyvegan and could presumably be eaten straight from the can in a pinch. It was just $0.63 at #aldiusa — perfect for a student’s budget.

I always have a couple cans of corn in the pantry but struggle to find good use for them. I can across a recipe for Roasted Red Pepper & Corn Bisque in my Veganaise Cookbook by Follow your Heart. It provides some wonderful summer flavor during an April blizzard. The corn is sweet, which makes it a perfect match for some spicy flavors and lime.
