This is my sugar of choice. Does well in fermenting kefir. Coconut sugar is more nutritious than cane, offers my kefir grains more minerals. It's certified low glycemic and #organic. The company supports regenerative agriculture. The fact regenerative ag is rarely mentioned leads me to believe it's actually fair trade. Hope I'm not getting burned. Even though I don't know of a resource for #crueltyfree ethical coconut, I trust this brand qualifies as that too and doesnt use enslaved primates to fetch coconuts. I find it difficult to trust anything coconut. Did you know coconut blossom nectar is called nira?
Great for baking. I use this instead of traditonal brown sugar. Made some black bean avocado brownies last night using this sugar and they were perfect.
