Usually we have the regular firm tofu because that's what Costco carries, but we were out and I saw this while browsing our local Asian market. Extra firm tofu is easier to work with because it doesn't require much pressing. Just squeezing it a bit while taking it out of the packaging does it! We used this to make little tofu nuggets. Instead of cutting them into neat cubes, we tore them into little bite-sized pieces. I really liked this method! It increased the surface area of the nuggets and made them crispier. We tossed them in corn starch and a homemade "poultry" seasoning from the Herbivorous Butcher cookbook.
