Somehow this is my first time having pho! I've heard so much about this iconic soup, but it's been hard to find a vegan version in my area. There has to be vegan pho in Minneapolis, so maybe I haven't been looking hard enough. Traveling all the way out to Minnetonka for this giant bowl of soup was totally worth it!
This pho has is made with a super flavorful vegan beef broth and is packed with vegan proteins. It had vegan beef, ham (I think Tofurky roast), chicken, and nice slabs of tofu. It also had mushrooms and lots of fragrant onion. Bean sprouts, jalapeno, lime, and mint were served on the side. I really loved this dish. It was so flavorful and absolutely packed with rice noodles and vegan meats. It's an amazing deal for $17! There are so many dishes here that I'd love to try, but I know every time I go back this pho will be calling my name!
