Vegetarian Banh Mi

Often have this. Healthy, filling, tasty. Perfect for lunch!

The Banh Mi had lots of fresh sliced veggies packed into a fluffy baguette, but it was a bit difficult to veganize since there was tofu and omelette, plus a suspicious creamy sauce (mayo?) But the bread was really fresh and the sandwich actually felt light enough.
