Quinoa Salad

Had an unexpected business lunch. There was no vegan option on the menu but they were happy to adjust menu items. The quinoa salad was part of a 2-course set lunch. It was beautifully presented and tasty. They removed the feta from the dish to make it vegan. It was loaded with avocado. 👌
