Eggplant Stir-fry

Some staff cannot speak English. But those who can speak English are very helpful and are quite knowledgeable about what dishes are vegan. The breakfast economy beehoon has heaps of side dishes to choose from.

Lian Xin tends to do a competent job with gourds, so I picked this eggplant dish and the luffa along with mee tai mak for breakfast in the pick-your-own bento selection. Would have loved for this to have more of a braised quality to it, but hey, it was decent.
