This consisted of fresh zucchini zoodles and cherry tomatoes tossed in a pecan pesto and cashew cream, and topped with hazelnut parmesan and cilantro, plus spicy BBQ tempeh. It was vibrant and refreshing, with a deep, rich pesto that perfectly complemented the juicy, light zoodles. The spicy BBQ tempeh provided a nice boost of protein and additional lively flavors.
