Caramelized Golden Beet Salad

This consisted of roasted and caramelized golden beets marinated with a golden raspberry shrub and lime leaf, and salad mix, tossed in a hazelnut yogurt dressing and topped with shaved radish, crispy puffed wild rice, and cilantro. This had a lovely mix of textures and an impressive depth of flavor.
