Wow what a fish to find! This is The Howe's entry for the Twin Cities Vegan Chef Challenge. It's so hearty! Usually August would be an odd time to want something so heavy, but since I've been lifting and biking a lot this month, I was so ready for this! It's made with Impossible Foods beef and sauteed mushrooms wrapped in a puff pastry. It's plated nicely on top of mashed sweet potatoes, sauteed green onion and arugula, and in a pool of savory vegan au jus. This was of course really meaty, but was a great treat. It was perfect to have half and pair with a lighter option like the mojo bowl.
