This was such an amazing rice dish. I'm generally not someone who would gravitate towards pineapple in a savory dish, but it really worked with the curry rice! I loved the harmony of flavors between the curry, veggies, and pineapple. The portion was big too, easily two meals! Make sure to ask for it vegan so the egg can be removed.
