How exciting! This authentic patisserie in St. Paul just perfected their vegan croissant recipe! These things are huge! The bread is so light and airy. They're also very lightly glazed, which makes them sweeter than croissants I'm used to. It's been a while since I've spent much time in Paris, so I'm not sure if I've ever had this sweet version. When I think of a croissant I just think of the bread with no sugary glaze. It was really nice though. I loved it with a London fog. I'm hoping to see some fun flavors made vegan! I really love that these are priced the same as the nonvegan croissants.
