Miso Eggplant Poke Bowl

My husband has been dreaming about going back to The Poke Co for this bowl! Enough said 😆😆

This is their other vegan poke bowl. It is delicious! The miso tahini sauce that is put on is insanely good. I always order my bowl with half sticky rice, half kale and cabbage. I always feel super healthy after this meal as it is super wholesome and nutritious
