I can't believe I haven't spent much time in Theo Wirth. It's a beautiful park just outside Minneapolis with great biking trails and the incredible Eloise Wildflower Garden and Bird Sanctuary. I attended a tour through the garden for my Master Gardener's course and really loved it! There are so many spring ephemerals in bloom, and I got a great picture of a barred owl! It was so fun to take a couple hours out of my workday on a Tuesday to spend some time in nature.
By the end of the tour though I was so hungry! I knew that Theo Wirth had a little restaurant that is pretty vegan friendly, so I thought now was the perfect time to check it out! This bowl sounded nourishing and perfect for a warm spring day. It has rice, avocado, pico de gallo, salsa roja, beans, radish, jalapeño, cilantro, and lime. It wasn't anything mind-blowing, but it's great fuel for a hike or bike ride.
