Instructions
- In a large saucepan, add a splash of cooking oil (such as olive oil or sunflower oil).
- Add the finely chopped onions and sauté until softened, about 5-7 minutes.
- Stir in the chopped carrots and minced garlic, cooking for another 3-5 minutes until slightly tender.
- Pour in the tinned peeled tomatoes, dried thyme, bay leaf, and dried oregano. Stir well to combine.
- Crumble in the two vegetable stock cubes and add enough water to generously cover all the vegetables.
- Bring the soup to a boil, then reduce heat to a simmer. Cook for 35 to 40 minutes, or until the carrots are very tender and the flavors have melded.
- Remove the bay leaf. Use an immersion blender to blend the soup to your desired consistency, or carefully transfer to a regular blender (in batches) and blend until smooth.
- Season with salt and pepper to taste.
