I babysat for a family in the Francis Marion hotel and they insisted that I order room service for dinner, so I did, because of course I didn’t want to be rude and how could I not when a dedicated vegan option was offered!? So exciting!
I enjoyed this cozy meal of vegan ravioli, sautéed collard greens and fennel, and crispy roasted seasoned chickpeas in a rich creamy coconut-based garlicy sauce! I added salt and pepper and think it would’ve benefitted from a squeeze of lemon to cut through the heavy fatty sauce, but it was still so yummy and flavorful! While the price was insane, you expect that from room service and honestly this portion was very substantial! It’s also so unique and not something I would normally make, so I’m so glad I got to try it! It was such a nourishing hearty meal after a long day of school and babysitting! I’m so thankful that the Swamp Fox restaurant (connected to the hotel) was mindful of dietary restrictions and sought not only to offer a suitable option, but one that obviously had lots of thought and intention put into it!

Oh I also ate most of the toddler’s leftover French fries which were bomb, so recommend those too haha!
