Excellent rendition of the iconic yam ring! I personally prefer a spicier kung pao mock
dish for the centre of the yam ring but this light and well seasoned veggie and mushroom stir fry was a great alternative.
The yam ring is crispy and nicely baked. Other ingredients are fresh lily bulb, capsicum
(wish they would've cut it in a smaller pieces 😂), celery, cashew nut, and king abalone mushroom. #veganisnotscary
