Vegetarian Pho

This seemed to be a good enough dish when I was still living in Edinburgh. But looking back, they really should have not called it pho since no part of it resembles it - it is just a rice noodle vegetable soup of sorts. But it’s not a bad rice noodle vegetable soup.
