Vegan Cheese Locomoco Donburi

This is a really satisfying dish. It’s a rice bowl with a vegan burger and fresh vegetables. The cheese and tomato sauce, combined with avocado gives it a bit of a Mexican twist. There’s a good ratio of veggies to rice, and the patty is homemade and not “meaty”, which is great.
