Vegan Vietnamese Banh Mi

Very generous with tofu, and great bread! Love that this option is a little more creative than a boring ol’ hummus sandwich for an omni-cafe. (No shade to the chickpea - we all love it really; it’s just invited to EVERYTHING. Same as the goat cheese tart when I was vegetarian 🙄) While I praise the cafe for the amount of tofu it does indicate a bit of a void where the other elements are concerned - perhaps a bit more pickled carrot and daikon?

It was great to see a clearly-labelled vegan option available since I was starving after walking around the botanical garden. This banh mi was tasty and filling, but nothing special. It has a lot of tofu and just a few veggies, with a creamy/spicy sauce. I wish it had way more veggies!
