Tofu, Kimchi and Yuba Salad

Organic, local, seasonal tofu - very fresh if a little bland. The yuba strips are nicely textured but again quite simple. Kimchi is a tad salty but not fishy. The sauce is amazing - a surprising salty sweetness that there could really be more of. Good protein side!
