Sweet and Sour Hericium Erinaceus with Pineapple

This dish was super tasty. The mushrooms are actually lion's mane mushrooms and are very chewy and chicken-like. The pineapple and peppers complement the sweet and sour sauce nicely. Would definitely get this again.
