I made this as part of a cooking class in Da Nang, NOT Hoi An (their Da Nang location isn't listed!) I've always had trouble making these at home, but the staff showed me how to do it correctly :) We used mustard greens, lettuce, carrot, wood ear mushroom, vegan ham, and tofu in the rolls, and made our own dipping sauce from vegan fish sauce, ginger, garlic, and chilli. So good!
