Spinach Lasagne

This dish was outstanding! Vegan E Meet Italy is a real gem. They veganize nearly everything on their menu- classic Italian food, so beautifully executed. There’s something for everyone- pizzas, pastas, soups, bruschetta… even desserts! Honestly can’t wait to go back.

A bit dry and sparse (only one sheet of lasagne and layer of veggies); didn't get that comfort food feeling expected from a lasagne.
