Sol Food is Puerto Rican cuisine and the Vegetariano is labeled on their menu as
vegan. It was really flavorful and filling too. You have never had beans like this before, or rice! Plus comes with fried plantains and salad. They provide their proprietary Pique at each table which is a delicious spicy vinegar-based sauce. It's really good on the rice! Be warned that their coconut milk coffee is oddly not vegan. It's made with condensed milk and a coconut cream topping, though you can request to substitute the dairy with actual coconut milk.
