This consisted of thin rice noodles in organic tofu curry sauce served with pickled vegetables, peanuts, bok choy, diced tomatoes and green onions, and cilantro. Hearty, comforting, and satisfying, with rich savory flavors, it is no surprise that this is a popular dish of the Shan State, home to most of the Shan people, the largest ethnic group in Myanmar/Burma.
