Roasted Eggplant And Miso Dressing Open-faced Toast

Chopped Eggplants and tomato with olive oil with subtle miso dressing open faced toasts using sourdough bread. Bread is crispy and nice but I'm not impressed by the eggplants... my least favourite toast at the social space. Pick the brussel sprouts with cashew nut butter or banana coconut peanut butter (without honey to make it vegan) instead.
