Soft and fresh ravioli bought by weight at the Vegan Store, stall n°83 of the Testaccio market. Great dough! The filling is made of Violina pumpkin, almond ricotta and walnuts. The prevailing flavor is the sweet given by the pumpkin and you can also feel the pieces of walnuts inside.I cooked them in a pan with the sauce to prevent them from breaking and the result was very good!
