As very few restaurants are open on Mondays in Ghent especially at lunchtime, Le Botaniste has the competitive advantage of being one of the rare full vegan places serving food almost 7/7.
The staff recommended this seasonal ratatouille salad and I followed their advice. I loved the combination and contrast of warm (the #quinoa and the deliciously spicy #ratatouille) and cold elements (the lettuce, kimchee, vegan #beetroot and soy based balls). The vegan #yoghurt and #curry sauce toppings were a bit less my cup of tea but still okay.
14,50 euros is a fair price. So I too can recommend this dish and this 100% #vegan restaurant for its constant high quality level, its friendly and helpful staff and its proudly showing off as a meat free 100% plant based zone.
