two parts: the “white” of the egg is made out of their #richassbroth that has been seasoned with sea salt and gelled with agar. The “yolk” is a combination of nutritional yeast, black salt, and sodium alginate. Then they spherify the yolk using a little magic and place it in the center of the white 💫 The result: the yolk pops just like the real thing! 😱🥚

The broth is indeed #richassbroth, as advertised in the pop up in a glowing neon

sign. The broth is sunflIwer seed based and the richest vegan broth I‘ve had. However, noodles were not springy enough Given the $12 price poInt and the ease of finding a table, I would give this place another chance. Also, I will skip the vegan egg next time; weird texture like soft jello!

Very rich broth, so delicious. Yummy veggies and overall tasty.
