Figured I would like this seasonal Pumpkinhead Panini but was super surprised by how much my non-vegan mom loved it too! It’s a wonderful fall sandwich, all of the flavor components combining perfectly together ~ roasted turk’y slices (obvi one of the most fall “meats”), fresh greens, cheddar + american cheeze, sweet tart craisins (!!!), and a delicious pumpkin mayo. The seasonal mayo spread mixes with the cheeze and the craisins to create this delicious pimento cheeze-craisin spread that really just makes the sandwich!
