Pad Woon Sen

Take out dish from a Thai restaurant in Bend, Oregon. It was really good and the vegan version comes with fried or fresh tofu (I chose fried) and mushrooms.

This is not an automatically vegan dish, you must order it vegan and with tofu. I ordered it 3 stars and it was just the right amount of spicy. The spicy rice noodles are underneath every bite of vegetables and tofu. I feel like they have scaled back the vegan options compared to previous years, so I was a bit disappointed with the options.
