This is my favourite bowl at Pure Kitchen. You can have rice or cauliflower rice as the base - usually I can swing two lunches out of this if I go for rice, it’s so filling.
It has plenty of black beans and veg, plus the guac and sauce keep it from being dry. The crispy tofu is the perfect topping to tie it all together and add more protein.
