Absolute best vegan restaurant in Lincoln Nebraska! I can go on and on about Pepe's Bistro / Kitchen; it is five star pretty much all the time! See the beautiful ingredients in the third picture! The flavor is so powerfully good! There is not much of a crunch because with the heat and the other moisture intensive ingredients it doesn't leave the crunch factor crunchy but I don't care too much because it's just that good! I love the small green powered salad with mango salsa! Vegan peace and love
