This pad Thai has mixed seasonal veggies, lotus root, ginkgo nuts, chickpeas, red kidney beans,

black beans, with a homemade sauce and green mango. It’s a decent portion that’s healthy and full of veggies — just no traditional Pad Thai flavours.

It was an interesting twist of the traditional Pad Thai, topped with big chunks of

veg as opposed to having them blend more with the noodles. The noodles themselves ha stick together so not the easiest to eat but he flavor was good. I believe it was made either without sugar or with brown sugar? 🤔
