An almost perfect #pasta dish, with fully recyclable packaging and really thoughtful plating 🙂 Just some low-hanging fruit in the prep really: slice/dice the #garlic cloves more finely, and fry them until they release more of their flavour into the mix; keep the #spaghetti al dente; do something to the #broccoli to give it more flavour for #unhealthyvegans like me 🤪
The #tofu is skin-on so it retains that bite on the outside, but is all soft and fluffy inside, if you like that 😅 What I most appreciated was how this was reminiscent of #saltedegg or #kamheong pasta, which I regard as one of the best #fusion concepts ever attempted upon the innocent embryos (thankfully veganised now 😅). This is achieved through the use of #cashew based #buttermilk - seriously laudable stuff 🙌
