Lentil Salad With Roasted Cauliflower And Broccolini

Light salad with a nutty finish! I really like the simplicity here. Optional dressing between either balsamic or lemon!

A very simple salad with a great lentil to veggie ratio to quiet any rumbling stomach. I really enjoyed it, but believe more thought can be put into the composition of a dish at $16.

This lentil cauliflower and broccolini salad is vegan and I selected a half portion which cost $8++. It was filling, refreshing, and had a good mix of yummy veggies including the roasted cauliflower with seasoning and also broccolini, spinach and diced bell peppers. Yum yum.

A protein packed salad full of lentils and nutrient rich with the broccolini, spinach, cauliflower and the herbs and spices used. Good portion size too 😋 #Veganuary
