Lemon Blueberry Ricotta Pancakes

Short stack of blueberry cakes (3) with a sweet tofu ricotta baked into them with a blueberry sauce on top and a little lemon zest! I made it a breakfast by adding Tofu Scramble and Smashbrowns! One of a kind taste! The blueberry muffins were loaded with blueberries and they were dense delicious from the tofu baked inside of them! And the blueberry sauce mostly consisting of blueberries; it was not a sugary syrup!
